Barely alive, we stumbled upon a tiny local spot \u2013 your classic family-run street food joint. No fancy decor, just plastic chairs and an open kitchen facing the street. It looked\u2026 okay. We claimed a table, dreaming only of a strong, black coffee to resurrect us.<\/p>\n\n\n\n<p>The moment we shrugged off our \u201chouses,\u201d we felt a weight lift \u2013 not just from our shoulders, but from our bellies too. We glanced at the table next to us, where a group of local guys were hunched over plates of crispy tortilla chips soaked in red salsa, each topped with a perfectly fried egg. More and more food kept appearing at their table.<\/p>\n\n\n\n<p>Travel had already taught us one golden rule: <strong>eat where the locals eat.<\/strong><\/p>\n\n\n\n<p>With the ocean breeze in the background and the undeniable smell of corn tortillas wafting through the air, we couldn\u2019t resist.<\/p>\n\n\n\n<p>\u201cMaybe we\u2019re still alive?\u201d I asked, half-joking. \u201cI\u2019m starving,\u201d Gabi declared. \u201cShould we try that dish with the egg on top?\u201d<\/p>\n\n\n\n<p>And just like that, completely by accident, our lives were suddenly divided into <strong>before and after chilaquiles.<\/strong><\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">So, What Are Chilaquiles?<\/h2>\n\n\n\n<p>A classic Mexican breakfast or brunch dish that has stayed with us ever since. It starts with leftover tortillas, fried until golden and crispy, then simmered gently in salsa (the key is <em>gently<\/em> \u2013 not too much!). Finally, they\u2019re topped with cheese, avocado, sour cream\u2014whatever your heart desires. The name comes from the Nahuatl word<strong> <em>ch\u012bl\u0101quilitl<\/em>,<\/strong> meaning \u201cthings soaked in chili,\u201d and the dish dates all the way back to Aztec times.<\/p>\n\n\n\n<p>Each region of Mexico puts its own unique spin on it: some add chicken, others avocado; some won\u2019t serve it without a mountain of cheese, while others insist on a spoonful of tangy <em>crema<\/em>. But there\u2019s one universal truth:<\/p>\n\n\n\n<p><strong>They have to start crispy, then soften just a little.<\/strong><\/p>\n\n\n\n<p>If they go completely soggy, you no longer have chilaquiles\u2014you\u2019ve got tortilla soup. Also delicious, but not the point here!<\/p>\n\n\n\n<p>It\u2019s even said that chilaquiles are Mexico\u2019s answer to a hangover cure.
